Shrimp Avocado Garlic Bread

Get this:
  • 1 loaf of ciabatta or sourdough bread
  • 1/3 cup of garlic butter
Garlic Shrimp
  • 2 tsp of minced garlic
  • 1 tsp paprika
  • Juice of 1/2 lemon
  • 1 lb shrimp (no veins, peeled, no tail)
  • 1/4 cup finely chopped parsley 
Avocado Salad
  • cooked shrimp from previous part
  • 1 cubed avocado
  • 1 cup of cherry tomatoes
  • juice of half a lemon
  • salt
Do this:
  1. Preheat oven to grill or broil with medium-high heat. Put the bread on a baking tray with cooking oil on it. Spread garlic butter on each slice. Grill/broil until nice and golden brown. As they're cooking, work on your other components of this dish while keeping an eye on your bread.
For garlic shrimp:
  1. Mix the garlic, paprika, lemon juice, and shrimp in a bowl and add salt to season to your liking. Drizzle a tsp of oil in a pan or skillet and cook the shrimp for about 3 minutes on each side until they're solid colored. Take off the heat and add parsley and set it aside to cool slightly.
For avocado salad:
  • Combine the avocado, tomatoes, lemon juice, and salt in a bowl and mix. Add the shrimp and mix very gently because avocados are present. Spoon the mixture onto the garlic bread and serve.
