Shrimp Avocado Garlic Bread
Get this:
- 1 loaf of ciabatta or sourdough bread
- 1/3 cup of garlic butter
Garlic Shrimp
- 2 tsp of minced garlic
- 1 tsp paprika
- Juice of 1/2 lemon
- 1 lb shrimp (no veins, peeled, no tail)
- 1/4 cup finely chopped parsley
Avocado Salad
- cooked shrimp from previous part
- 1 cubed avocado
- 1 cup of cherry tomatoes
- juice of half a lemon
- salt
Do this:
- Preheat oven to grill or broil with medium-high heat. Put the bread on a baking tray with cooking oil on it. Spread garlic butter on each slice. Grill/broil until nice and golden brown. As they're cooking, work on your other components of this dish while keeping an eye on your bread.
For garlic shrimp:
- Mix the garlic, paprika, lemon juice, and shrimp in a bowl and add salt to season to your liking. Drizzle a tsp of oil in a pan or skillet and cook the shrimp for about 3 minutes on each side until they're solid colored. Take off the heat and add parsley and set it aside to cool slightly.
For avocado salad:
- Combine the avocado, tomatoes, lemon juice, and salt in a bowl and mix. Add the shrimp and mix very gently because avocados are present. Spoon the mixture onto the garlic bread and serve.
