Shrimp and Avocado Salad
Get this:
  • 1 lb medium pan-seared shrimp with a lemon or lime drench
  • 8 cups of greens (your choice: spring mix, spinach, romaine lettuce, etc)
  • fruity or lemon-flavored extra virgin olive oil or regular extra virgin olive oil
  • juice of 1/2 a lemon
  • 1 avocado, sliced or diced
  • 1 minced shallot
  • salt and ground black pepper
Do this:
  1. Prepare the pan seared shrimp and drench in lemon or lime
  2. Toss the shrimp in the greens in a bowl and lightly drizzle olive oil and the juice from the  1/2 lemon and toss lightly
  3. Add the avocado and minced garlic, then season with salt and black pepper and serve.
