Shrimp and Avocado Salad
Get this:
- 1 lb medium pan-seared shrimp with a lemon or lime drench
- 8 cups of greens (your choice: spring mix, spinach, romaine lettuce, etc)
- fruity or lemon-flavored extra virgin olive oil or regular extra virgin olive oil
- juice of 1/2 a lemon
- 1 avocado, sliced or diced
- 1 minced shallot
- salt and ground black pepper
- Prepare the pan seared shrimp and drench in lemon or lime
- Toss the shrimp in the greens in a bowl and lightly drizzle olive oil and the juice from the 1/2 lemon and toss lightly
- Add the avocado and minced garlic, then season with salt and black pepper and serve.
